How come when you watch shows like on Food Network the cooks always kill everyrthing with salt? Especially considering the fact that there are so many americans that are or are supposed to be on low sodium diets, don’t these cheffs even consider that when they prepare these recipies on TV? Or maybe they should have a show or two that are dedicated to healthy cooking, not just low cal or low carb but healthy cooking like low fat and low salt. I have watched those low cal type shows as well as the low carb ones and they still drowned everything in salt, so I think they need a show that teaches people how to cook healthy without added salt and fats, show us what to use instead of the salt so that the food doesn’t all taste the same, what do you think? what do you use as a substitue to salt in your cooking? I am looking for new ideas other that onion and garlic powder, I don’t care for any of the Mrs. Dash type mixes so I am looking for single type spices that I can mix together myself.

actually they use salt and pepper, they use salt because salt draws out the juice and flavor from inside the food making the surface of the food more flavorful.
those may not be salt, might be MSG, the almost look alike. Msg bring more favor than salt do.

I know what you mean they say just add a pinch of salt and put about 10 pounds in.
I don’t know perhaps it is just that salt gives more flavour and what they are cooking needs that.

I agree with someone’s comment above. It may be MSG since MSG is used to bring out flavor in the food. It makes the flavor more…deng, what’s the word I’m looking for…? Well, it brings out the flavor. If it happen’s to be salt, then either they are doing a poor job measuring what they put into the food by eye or that they’re just showing you what it’ll be like at the end. Emeril doesn’t put much salt in his food; he puts more garlic which is why he doesn’t use salt much.
I’d suggest using a light soy sauce, or chili paste. Garlic and onion powder are good substitutes though.
Salt does two things when added to food. 1. to make things salty.
2. Salt in moderation takes out the bitterness in food.
If you don’t like the food network then don’t watch the shows, or as Emirl says the Food Police will get you.
Some chefs don’t use salt they let the consumer to salt thier own food to their own taste. I only use salt in my beans and I do it with salt pork no added salt. Oh and abot MSG it really does not add flavor what it does is bring blood to the surface of the tounge allowing the tounge to taste more. This is why some people throats sweel shut from an over reaction to MSG which is really an allergy to MSG.
first off, put down the onion and garlic powders. use the real things. you get real flavor, and you just added veggies to your entree. second, use kosher salt, it has a lot of flavor, so you don’t use that much at all. and last, there are so many spices and seasoning mixes out there that compliment your dishes in different ways. you want spice, get cayenne pepper. you want a little twist, use lemon and/or orange zest. you can go to the websites of the spice brands that you enjoy most, and get lots of ideas on what to use on what. you can also fire up the grill for that great fire grilled flavor. i cook for a living, and very, very rarely use salt at home. it is possible to get great taste with out having your sodium soar through the roof. keep up the healthy cooking.
Ok, basically you gonna need salt in your food, or else it will be tasteless and just not taste right. But I understand where you are coming from, Too much salt does cause problems to the body, but too little can be just as bad.
Now if you need to be on a low sodium diet, then its really a case of adding salt to taste. Just because the food network’s chef added a teaspoon of salt, doesn’t mean you have to do the same. You can add much less than that as long as you are happy with the taste. Best way to tell if the food is just right, is to add a bit at a time, stir well and taste it.
Depending on what you are cooking, you can use ingredients that can replace actual salt, because they have salt content in them already, e.g. soya sauce and anchovie fillets. Again it all depends on what you are cooking. But to be honest, "salt to taste" is the best way forward
As far as low fats are concerned, you need to consider using olive oil instead of other oils, fat, lard or butter. And sometimes, you simply need to add a tablespoon of olive oil to start the cooking process depending of what you are cooking.
For meats, remember to trim away excess fat, like you can have skinned chicken, instead of having it with the skin on.
Instead of using onions to create the base of a dish, you can always use finely chopped root ginger or fresh garlic. If you don’t like the smell of garlic, and you want to create a casserole or curry of some kind, you can use very mild chills, desseded and finely chopped, freshly chopped root ginger and about a tablespoon of olive oil. You can cook this as your base of the casserole or curry and then proceed to add the ingredients you require the make the dish in question.

Salt brings out the flavor of almost everything, especially in baking . You can usually get away with using half the salt in a receipe without sacrificing the taste, Try using fresh lemon juice on steamed veggies and fish and poultry , along with a lemon-pepper blend and plenty of fresh herbs. Also, try using sea salt or kosher salt rather than plain old table salt – you can use much less and still get the great flavor.
So chefs won’t later get complaints of their food having too little salt. They’re just covering their bases.
they want to die faster and its true ppl who eat too much salt will die faster than ppl who dont or eat very little stufff that have salt

I agree. I hardly use ANY salt on ANYTHING. With other herbs and spices, it is barely needed.
Salt has a bad rap in a lot of cases. We cannot live without salt.
Salt was, for years the method used to keep food from spoiling.
It is also a major flavour enhanser.
If people wish to cook without added salt that is fine, but do not condemn the use of salt.
Salt monosodium glutamate, all of the commercial seasoners help give food a quick fix to making food taste better. Now don’t get met wrong, salt is necessary with preparing food. But if you follow the principles of using herbs and spices and allow food to simmer or marinate, salt is the last resort. Slow food offers that, but we live in a society with the quick fix, the Checkers, Burger Kings, McDonalds, and other fast foods. Our palate is no longer accustomed to mama’s home cooking. Some of mama’s cooking is a healthier alternative.
they do use too much salt, that way they can blame the taste on too much salt i would guess, everything already has salt in it to begin with, i dont even use salt on my food, i like real butter too, and it has enough salt to begin with too,
