Thanks for the ideas – esp. where to cut the asparagus. But why cook the asparagus in so much water – and then throw the water and vitamins away? Why not : 1) steam, or cook the asparagus in a minimum of water, or 2) cook the aparagus first then use the water to cook the risotto, or 3) cook the aparagus in the chicken stock then add to the risotto. Either way – more flavour and nutrition!
