well that can depend alot on your budget. how much do you have to spend? how many dishes do you have to prepare.
anything from rustic italian, spanish, morrocan or even greek food would be easy and delicious. plus you probably already have the utensils/.

HOW ABOUT CHICKEN FAJITAS FROM MEXICO?
If you have to go somewhere to make this recipe, you can have it all ready to go and it doesn’t take long to make. There are very few people who don’t like fried rice. This recipe is a variation on an Indonesian recipe called Nasi Goreng.
NASI GORENG
2 eggs
1 T butter
2 c cold cooked rice (best when cooked the day before)
3 strips bacon – diced
1/2 breakfast ham (that’s the one thick slice you get in the store – not in the deli section) – diced
1/4 medium onion – diced
soy sauce
black pepper
2/3 tsp sugar
Beat the eggs. Place the butter in a skillet, melt it, and then add the eggs. Cook like an omelet making it one whole piece. Roll it up and remove from the skillet. Slice it cross-wise into strips and set aside.
Place the bacon in the skillet and cook until it loses some of it’s fat. Add the onion and cook until soft, stirring both often. You don’t want the bacon crispy so the onions will be done before then. Add the ham and heat it. Add the rice and mash it into the rest of the food, allowing it to heat.
Mix together the soy sauce, 2/3 tsp sugar, and black pepper and sprinkle a little over the mixture. Give it a stir. Keep adding until all the rice has been lightly coated and is a light brown. Add the shredded egg over the top, give it a stir, and put in a bowl to serve.
Serve the Nasi Goreng with pickles – either sweet or sour. What the pickles do is cleanse the mouth so the next bite tastes as good as the first one.
When I make my Nasi Goreng, I use an Indonesian product that you can find in an Oriental store called either Ketjap, Ketjap Manis, or Cetjap. It is also known has thick sweet soy. If you can find that, you can use it for the Nasi Goreng as well as a great marinade for chicken, beef and pork. The original Nasi Goreng recipe I found also contains shrimp but I don’t use that for breakfast – I use the bacon and ham instead.
Hope that helps.
